Being a frequent visitor to the coffee temple Brød, Kaffe og The know for their "Kaffe med respekt", I was pleased to find this excellent collection of articles by espresso guru Dave Schomer: Espresso Vivace.

All it takes is 7 grams of beans, 5-7 cl of water at 95 Cm, a steam pressure of 10 bars and 25-27 seconds of patience. Simple and yet an art so hard to perfect. Respect to all the passionate barristas of the world!
